I’m here to report back…if anyone is looking for something new to do with eggplant, this recipe is fantastic: Braised Eggplant with Paprika, Coriander, and Yogurt | America's Test Kitchen Recipe I followed the recipe almost exactly. I did not have cilantro for garnish, so used fresh mint. It worked!
I served it with rice and chickpeas and it was a really hearty (and healthy) meal.
