@sevmom, before the ceremony we had individually portioned hors’ d’oeuvres set out on a table on the deck for self-service - seared tuna on bamboo forks with wasabi aoli served in bamboo cones, crudité with hummus in individual takeout containers, and scallion pancakes rolled with chicken, napa cabbage and plum sauce in bamboo boats. After the ceremony we had a plated watermelon and feta salad followed by a room temp buffet (not self-serve, we had servers so only one set of hands touched the utensils) of medium-rare tenderloin with a port wine sauce, citrus-glazed salmon, red quinoa with grilled corn, homemade potato chips portioned in bamboo boats, and a trio of asparagus, snap peas, and haricot vert dressed in a lemon drizzle. Dessert was the tie-dyed white cake with buttercream frosting and fresh berries.

I’m curious - is there a story behind the homemade potato chips? Is this a regional thing, a specialty of the caterer, a family favorite or just “sure, potato chips!” (I’m sure they weren’t your average chips )

@abasket, no story behind the chips - just the caterer’s suggestion. He thought we should have a simple alternative to quinoa! But they were amazing, homemade waffle fries and I wish there were more leftover!
