Would there be any major difference between submitting a 2400 single-sitting score and a 2400 superscore to top schools? My first time taking the test resulted in an 800 on the CR section, and I jokingly told my friends that I was going to try to manage a 2400, one section at a time. I just got my scores back from the May 2nd test, and I was pleasantly surprised to find another 800 in front of me, this time on the writing section. My highest math score is currently a 700, and I feel comfortable that I could perfect that if I didn’t have to worry about the other 2 sections.
If I only do “okay” on the other two sections (realistically, 600s with minimal effort), and managed to get the 800 on math, would the “poor” total score as compared to my other 2 attempts (2230 and 2240) affect my admission chances, or would the shine from my perfect score distract them?

First of all congratulations, A single sitting will be perfect. For schools that superscore it’s fine but for the others that require to send all of your scores will look bad. Try to do your best. For math a 750+ will be awesome.
Dont slack off on other sections and only try on one section. A lot of schools look at all that you send, even if they say they superscore. I know a kid who wanted an 800 Math and did not try at all during the other sections and he got rejected from his first chose PSU with very high SAT scores. Always try your hardest.
