3 AP's for college admission

Heyy everyone!

I want to attend university in the UK in order to gain admission, to the schools that I am interested in, as an 'American International student" it is imperative to have taken at least two AP exams. So I have a few questions. Below you can find the courses I have taken and am planning on taking (I'm currently a junior), so based on my coursework what AP courses/exams would I be eligible to take? I'm planning on majoring in either music business or popular music performance, so I was interested in taking AP Music Theory, but my school doesn't offer that; is there anyway that I would still be able to take the course? Or, if not, can I take the exam without taking the course? If so, how would I prepare for the exam? If I took the AP courses my senior year, would the colleges still consider me as at the time of application the two courses weren't completed? Also, what are additional electives that I can take to look my college app more favorable?

AP US History

^That’s all you need.

Plus easy ones like AP Environmental Science or AP Human Geography just for fun and easy college credit. Screw Music Theory (I’m taking that though cause it’s so f’in easy!)!

Don’t take Lit. It’s a waste of time during Senior year. You’ll be soo depressed. Sooo much work. Regular English is the biggest joke ever, and there is no work in there. If you take English Lang the year before and then go into Lit, easy 100 class lol.
