4th year of language vs 1 - 2 more APs

I'm a rising senior in HS hoping to reach for Stanford. Due to scheduling conflicts, in order to take my 4th year of French this coming year, I would have to use a study hall hour and self-study with minimal instruction all year. Although possible, it would not be an ideal situation. Since Stanford recommends at least 3 years of a language (albeit more is better), I'm technically fine where I stand now.

That said, rather than self studying French all year, I also have the option of taking both AP microeconomics and AP psychology or AP environmental all year (in addition to 5 other AP classes). From an admissions standpoint, what would make me more competitive: going for the 4th year in a foreign language or taking the extra APs? (Also, which AP(s) would you recommend taking of those two options if taking that route is best)

Admissions only wants to see that you are pursuing your passions. If your passion in French then go with French, it makes you all the more impressive that you made the effort to continue learning. Just pick the class which interests you the most, if an interviewer asks “why did you take microeconomics”, it probably isn’t best to respond with “because I needed another AP class that looked good”. Just go with what you love to do

I think Stanford only recommend 3 years of foreign language. For admission, probably either way is fine, while more AP may get you more credits.
