Don't panic. The first thing to do is to look at the websites of the schools you think are the highest on your list. Each one will tell you exactly what they require in terms of SAT IIs--whether it is none, two, three, and whether they require (or prefer) that they be in particular subject areas. Most schools that require them only require two. Because of the SAT writing portion, the SAT II in Literature is not required. If you are applying to an engineering program or to a heavy duty math/science school, they will either require or strongly suggest a math SAT II. Some express a preference that you take them in two different areas (and science and history would qualify). If checking the school websites results in you finding out that you want to take 3 then you should consider taking a third one in May. You can take up to three in one day and you can decide this the day of the test and the college board will bill you (you can call them to confirm, but that's what I read). If you do need three, you might find that it would not tax your preparation too much to add a math or the literature, depending on your own strengths. I would agree that you should keep the option of taking the SAT again if you are not happy with your result. Best of luck!
