Is there a trustworthy place to find acceptance rates for schools? I’m particularly interested in the acceptance rates for fully paid vs. those needing aid.

Agreed. You could look at the percentage of the school that receives aid and back calculate to get a sense. Also, look at their endowment that will give you a sense of how generous their aid could be. Another factor to look at the number of international students. Internationals tend to pay full fair.
For most schools, you’ll see only an average acceptance rate. The reality is that it varies depending on whether you are day or boarding, need FA or are FP, what country you’re applying from, etc.
One school might give very little FA to international students and be very generous to day students in order to be a “good neighbor” in the local community.
The best you can do is ask if it’s something that might change your strategy. For example, if you were willing to be either day or boarding, you could ask the school if there’s a preference. If, otoh, you need FA, you need to apply for it. There’s no point in wringing your hands over that.
