I am planning on majoring in actuarial science at UIUC. Currently, I have a strong aspiration to be an actuary with the analytical/mathematical skills to support it. My hypothetical question is, if for some reason I do not end up wanting to be an actuary, for whatever reason, what can I do with this degree besides becoming an actuary? Would it be better to major in Statistics/Finance for more versatility?

Yes it would be better to major in something else other than Actuarial because it is a very narrow major. Nobody has heard of it so you will have an EXTREMELY hard time finding other jobs.

Plus you haven’t worked as an actuary yet so you wouldn’t be able to tell if you’d like it or not. Try to find an internship but that requires at least 2 exams (~500 hours of study) and a solid GPA. The actuarial market is extremely competitive right now due to various ranking websites rating it as the best job.
