Should I mention any work experience gathered at a university which is not the university I’m applying to?
For example, I did a summer programme at NYU. Should I include this in my work experience/resume/CV/etc when I apply to universities that are not NYU?

Yes, put it as an activity. Colleges don’t care if you went to a program someplace else, they do care that you are exploring your interests in productive ways.
Of course. It’s not like dating someone. colleges are fine with the idea you’ve been out with other schools.
