With rock climbing - might consider University of Utah - their mechanical engineering includes aerospace concentration.

Not well known for aerospace but Colorado School of Mines has a rock climbing wall in their student center

Yes they do! For anyone interested, U of Colorado Boulder (indoor) and Cal Poly (outdoor) also have rock walls.

Most in Colorado go to Boulder for aerospace. CU has climbing walls and real rocks to climb too (the flatirons). Mines is only about 30 minutes from Boulder, where the OP’s son is trying to ‘get away’ from (although in the end I bet he goes to Boulder, that his parents will give him his space and visit him twice a semester which they might do if he went to any other school in the US)

University of Central Florida

Florida Tech mentioned earlier as well

Ha ha, that’s what I am guessing will happen too. After all this research, he’ll just go to his local school. Then he could focus on getting out of state internships and/or study abroad to satisfy his wanderlust…
