Advancing my rigor, good or bad?

I am entering sophomore year of high school soon, and I am wondering for your output. Last year, my schedule consisted of: Spanish I, Biology, Geometry, Global Studies, Health, English 9. For this year my schedule is: Spanish II Honors, Honors Chem, Honors Alg. II, AP European History, Honors English. I know this doesn’t look safe at first, but I maintained A’s in all of my freshman classes, excluding a B+ in sem. 1 Biology. Not only that, but I was recommended for all of the classes I am enlisted in currently. I have heard the class ‘AP Euro.’ is very tough, so I am unsure whether to stay in it or not. My main questions are: Should I keep this schedule as it is?, and would colleges (preferably UCs) be alright with seeing a B or two for my sophomore year? Thank you for reading this, sorry that it’s lengthy, I just want to make my situation clear.

^^I forgot to mention that I run varsity Cross Country and Track two hours daily after school, so that should be factored into the question

The only one who can answer whether or not you can handle that schedule is you. For many students one AP and several honors courses are manageable with time and effort. Just make sure it wont be overloading yourself and result in too much stress and poor grades.

Generally colleges would rather see a few Bs with a rigorous course load than all As with an easy course load. Try to avoid anything lower than a B. AP Euro will really depend on your teacher, but it’s not as notoriously difficult as some other APs.
