Quick question that has been sitting in the back of my head for a few days. Would it be wise to take an afterschool activity such as Kendo or Brazilian Ju-Jitsu? I currently have a strong passion for martial arts but I don’t have any EC’s that move towards it.

The colleges look for "passion" and long-term commitment in one or two activities. They don't want a laundry list of activities with little involvement in any. If you are interested in something, then do it. The world doesn't totally revolve around getting in a top college. Once you are a freshman, you will have EC's for fun without regard to how they will look on a college application.

It is very hard to convince anyone that you have a passion for martial arts if you don't actually do any. What do you do, watch kung-fu movies?

It's not a matter of wise or not--it's a matter of it interesting you enough sufficiently. Except as I tried to point out, it will look foolish to say you are passionate about it when you don't do it--you'd just be demonstrating how you are not passionate enough, unless you can explain this.
