Let's say I wanted to submit a different essay depending on the college I was applying to, is that possible? Or is it one completed Common App that is sent to all colleges that require it.

One completed Common App.
The only different essays you can submit are additional submissions for specific colleges.
Also, you can edit your essay a couple of times after sending it out to colleges and before sending it to others, but that is to fix grammatical mistakes you hadn’t caught before, not to completely change the essay.

I believe you can submit up to three different “versions” of your essays, but your basic Common App essays shouldn’t change by school; that’s what schools require supplements for.

Not if you are using common application.
You can modify other things as you enter a different school before submitting it, but the basics will be unchangeable. They do that for a reason. Too many smart peeps, would abuse the system other-wise.
