Am I making a mistake in not taking an AP science?

I'm a current junior with a slight dilemma. Our school only offers six APs. I took APUSH and Calc AB this year and I'll be taking Calc BC, Stats, and English Lit next year [and probably self-studying Psych]. The only AP classes at our school that I won't be taking are Chem and Bio, because I want to take physics and we don't have it as an AP. I was planning on taking honors physics and self-studying for the exam, but the teacher is supposedly...uh...not the finest. Would it be difficult for me to self-study this?
*if you counted 7 AP classes, it's because we didn't offer Calc BC last year and aren't offering AB this year.

And should I try to change my schedule to take Bio or Chem? I really, really hate science [kinda weird, because I'm a math person], but I guess I could handle Bio, if it's mostly just memorization...how hard are these two exams?

I guess my worry is that I'll look terrible next to all these crazy CC and CC-like applicants, though I'd absolutely be taking more AP classes if we had more at our school, and were allowed to take them earlier. [Also, I don't know of anyone in my class right now who is planning to self-study any AP exams, though I believe a handful do every year.]

Oh, and my favorite schools so far are Swarthmore, Smith, Bryn Mawr and Haverford, if that helps.

Thanks :)
