My school offers minor degrees in Astronautical Engineering and Petroleum Engineering. Do you think getting a minor in either one of them would be helpful in finding a job ? How are the job opportunities for graduates with this minor? By the way, I am an Applied Mathematics major (bachelor of arts).

Might be good if you wanted to go to grad school in Petroleum (if it exists as a grad program?) or Astronautical Engineering. For actual engineering jobs, you’re going to be competing with people who majored in those subjects, and will be at a clear disadvantage because of that.

For better responses you might want to list the classes that those minors require. I won’t know anything about them, but it will allow someone else to tell you what those are sufficient for.
