Does stern pay attention to what you took as your foreign language i.e whether it is all too common like Spanish which i think almost everyone takes. I'd really like to take German even though it will be more challenging, I'd like to know they would pay attention to the fact that I am part of smaller group and more unique.

They won't care. You can take Latin, which no one other than the Pope understands. Relying on your foreign language to make you "part of smaller group and more unique" is shaky at best, unless you have a compelling reason for it. Something like, "I went to my local CC and took Swahili because last summer I went to Africa to help sick people and really liked Swahili, so I'm still taking it because I want to go back and help more sick people!"

Saying that you took German because it's more of a challenge is not going to cut it, methinks. Take whichever language you like best. The more you like it, the more likely you are to do well, and the higher your grades, the better.

I'm not sure where you're basing your facts off of, but Spanish is definately not the only popular foreign language at NYU. NYU kids are quite diverse and there are people taking Chinese, Japanese, German, Latin, Italian, all over the places.

Saying you took German because it's more difficult is pretty subjective. Some people might perceive German to be easier than Spanish.
