I'm currently a junior at my high school and A LOT of my friends are enrolled in at least 1 or 2 AP courses.
I haven't felt the need to take them because none at my school interest me but I was planning on taking one next year.
However, many people are saying that I won't get accepted into colleges if I don't have AP's. I was just wondering if any of you know if I should be worried about the fact that I'm not currently in any AP's?
I'm not trying to get into a highly competitive college and my GPA is 4.1 weighted so I didn't see a reason to worry but now I am.
Should I be concerned or take more AP's next year?

Well, AP classes are more rigorous than regular courses. So colleges will consider you into admission more if you do take AP classes. Furthermore, if your school offers it, then top colleges may question why exactly you did not take the course. However, it is up to you for as you said you, “weren’t really interested”. Then it is in your best to concern to include in your application that you only wanted to take courses for your interest/careers.

What colleges are you looking at? Have you taken any honors/dual-enrollment/other advanced classes? If you’re doing well in regular classes, I think you’d probably benefit from the challenge of an AP class (and the chance to earn college credit), but most colleges aren’t nearly as selective as the ones people obsess over on here.
