I was wondering, how important is AP English?

I am a senior, and I decided not to take it mainly because I feel that it isn't a good use of my time. Honestly, I have not learned much from my past english classes (though I do get either A+s or As). They don't teach vocabulary nor do they don't teach how to write better. They only have you read a book, discuss the book, write a few essays, and take a test... and repeat. I felt that taking AP Bio, AP Chem, and AP Spanish would be a lot more meaningful since they are "real" (anybody else feel this way?). I'm curious as to whether this may hurt me in the admissions process.

If someone else from your school applied with the class on their schedule, of course it will hurt. They'll think that you didn't take "full advantage of the educational resources" available to you.

I also think what your major is has a lot to with it. If you are an Engineering/Chemsitry/Physics (you get my point) major I think colleges wouldn't look as badly on not taking AP English more than if you were an English/Communication/History/etc.

All my classes are AP classes; it is just that I am not taking AP English.

I wouldn't worry about it. If you have a full schedule of APs, I doubt they'd look down on you for not taking AP English. One can only fit so many classes into one day, and you should take the classes that interest you most.
