AP or SAT II Subject Tests?

Which is more important in the college decision process?

I would say subject tests just because they are required by a lot of schools but class rigor is definitely a huge factor in college admissions as well.

What if I challenged some AP exams? Would that look good or would that look like I’m just trying to show off?

If the college requires SAT II scores that is the way to go.

If your school offers the AP course, take it. Otherwise the latter.

What do you mean by “challenged some AP exams”? If you mean you complained to College Board and wanted your tests rescored, that means nothing because CB does not tell colleges anything you did other other than your scores. The vast majority of colleges do not consider either AP scores or SAT subject test scores for admission. As far as admission goes, there are no colleges that require AP scores. There are 20 colleges that require subject test scores and another 30 to 40 that recommend or consider them if submitted and for those the SAT subject test scores can have meaning. There are also colleges, particularly high ranks, that will give some consideration to AP scores as part of their whole file review.

If the exams correlate with your interests or major, then go for it!
