I'll be a senior next year and originally I was planning on taking APES but now I've decided that I may take AP Physics C instead. I'm in an honors Physics class now and it's pretty easy but I haven't taken calculus. Without any real knowledge of calculus, how hard would the class be?

If you’re not going to be in calculus while you’re taking it don’t try it

You can certainly take it while taking calc AB. It will be very hard, but not impossible. In my AP Physics C class, there are several students who hadn’t taken calc, and they are doing fine. But if you are not going to be taking calc next year I wouldn’t recommend it.

What about taking Honors Calculus concurrently?

If you are taking honors calculus concurrently you should be fine. At first you will definitely have a harder time than those who have already taken calc, but you will learn quickly.
