First off, which would be easier to self study: Physics C or B? I really don’t know the difference. I know C needs Calculus, and I’ve taken Calculus AB.
Or Environmental Science?
I need just one more AP Exam to study for (I’m studying for USH,English Lit and Lang, and I’m taking AP Calc AB-I’m taking the class)

It depends. Which Physics do you need? Physics C is Electricity and Magnetism (recommended for those entering engineering) and Physics B is for pre-med students.
However, Physics B is no longer a course by itself; it has been split into 2 separate courses (AP Physics 1 and AP Physics 2). AP Physics 1 & 2 are Algebra based, so you knowledge of Calculus will suffice as prerequisites for the classes.
I’ve seen like, 4 of these threads so far about self studying in a month. Regardless whether you’re going to study APES or Physics, don’t start self-studying the curriculum a month/2 months before the exam, its simply too much material. You should have started at the beginning of the year.
AP classes are meant to be year-long. You won’t be able to learn the material AND study for the exam within a month. If you had a background of the material and has been self studying all year, now would the time to review for the exam (no more learning new material).
I recommend self studying for it next year, if your school doesn’t offer the class(es). If the classes are offered, then why not take them at your school?
the thing is I need to take it this year in order to get points on my gpa (that’s what my school offers when we pass an exam)…well, not points to the gpa but to the class. So, in order to get the points, I need to take the exam this junior year
