Should I take AP physics in HS? Would AP bio and AP chem be more important?
Important for what? Med school?
Med schools really don’t care what classes you take in high school and don’t even ask about them.
Take whatever class you feel gives the best preparation for your future college major.
Yes, for med school, but would premed care?
Pre med is an intention. It’s not a major. It’s a not person. “It” doesn’t care because it can’t.
What medical school admission committee look at are these things:

you’ve taken all the required pre-reqs courses in COLLEGE

you have strong stats (GPA, sGPA and MCAT score)

you’ve demonstrated that you understand what the career involves and can articulate clearly the reasons why you want to be a doctor

you have necessary qualities (academic and non-academic) that will make a good doctor
Medical school don’t ask about or consider things you did in high school.
You’re still in high school and a minimum of 7-8 YEARS away even being able to apply to med school. Stop worrying about how this or that will look to “premed.”
Why not take all three?
In high school you are preparing to enter university. Do you know where you want to go? Are you aiming for a very competitive university?
Physics is based on math, chem on physics, and bio on chem.
I guess the best question to ask is how much you like math? The follow up question: which AP physics we’re talking about? Lastly what are the core requirements at schools you want to attend. If you have to take physics in college again then it may make sense to do the AP. If your targets schools don’t accept AP scores, you may want to consider which classes you’d want to take at that college.
Lastly, how good are the teachers?
@gabby2001 Which year are you in high school? Is there any restrictions or limitations in your school? Those info will help to guide you. Most school have changed Physics AB and BC in to 3 (Phy 1, 2 and BC). So mostly you may not be able to do all the Physics. (Assume you are / will be doing at least 1 year of Phy, Chem and Bio before you can do any of the APs in HS).
Ideally it is good if you can do all the 3 APs. If that is not possible, do Chem and Bio and defer Physics for the following reasons. If you do AP Chem and if your college gives credit in college transcript, you can do OChem since there is a pre-req to do OChem. Also doing Bio helps to have a strong base when you do other bio courses in college which also needed for MCAT prep. Physics any how you will end up doing either 1 or 2 semesters in college.
Also if you are planning to apply for BS/MD programs, very few programs have a need for subject SAT in Chem and/or Bio. Though you should be able to take Sub SAT by doing jus the regular non-AP course, it helps you. But no program asks for subject SAT in Phy.
