I am a senior hoping for Columbia ED.
My classes are

AP English 4
AP Stats
AP Spanish 4
AP Physics
AP Psychology

I am considering about dropping AP Spanish because it's just too stressful and I already have 3 years of language. If I drop it, the only option I have is a regular Environmental science class.

Should I switch it to EnvSci? Would it influence my chance at getting into Columbia?

Switching to Env Sci shouldn’t have much of an impact on your application, if any. You should worry more about your SATs and application essays, provided that you already have a competitive GPA and have ECs you are passionate about.

Well, it can’t help. All things being equal, your application with the AP Spanish is stronger – even if minimally stronger – than your application with the Env Sci. But it sounds like your senior year schedule is otherwise pretty strong (4 other APs), so I can’t see it mattering in any sort of meaningful way. Also consider whether dealing with a AP language class that you’re struggling with will mean you’ll not only get a crappy grade in that class but your other grades will be affected as well.
