I'm an incoming senior who has already taken a Calculus course offered at my school by CSU Fullerton in my junior year. I am currently signed up to take AP Stats; however, I'm really not that passionate about math and would personally rather take AP Spanish.

I'm 100% headed towards a pre-med/biology major (I love biology), and my counselor told me that not taking a math in my senior year might hurt my chances for an Ivy league. I really want to take AP Spanish because I love the language and may consider pursuing linguistics as a minor in college, but I don't have enough room in my schedule to take both.

My schedules in the past years:

9th: H Integrated Sci 1, H English 9, H History 9, H Alg 2, Yearbook, Spanish 2
10th: H Integrated Sci 1, H English 10, H History 10, H Pre Calc, Yearbook, Spanish 3
11th: AP Biology, H English 11, AP US History, Calculus, Yearbook, H Spanish 4
12th: AP Physics, AP English, AP Gov, Yearbook, Art (need art credit), AP Stats/AP Spanish ?

Take math. Although if you’re looking at top schools, you’ll need to get your Counselor to explain why you couldn’t fit Spanish in (although I don’t see why you can’t fit it. Can’t you drop a social science or something?)

I’m involved in sports, English and Gov are grad requirements, I’m the editor in chief of my yearbook, and I need my art credit so I can’t fit in both :(

It is not as much that you should take Math 4th year, it is more you should have taken the highest level of Math offered by your school. Looks like you have already taken Calculus at a nearby college and gotten credit for it in your transcript. So you should be fine.
Take AP spanish, always looks good to take 4 years of foreign language and it can satisfy college foreign language requirement as well. I think AP Stat is considered one of the “easy” APs, a lot of students self study and AP Stat isn’t even given as much of a credit in colleges that I have checked (the top ones).
