Should I mention that I'm a British Jew when the form asks you about your heritage?

I'm applying to Yale, Princeton, UPenn and Stanford.

Any help would be great!

It's up to you but being Jewish is usually classified under "Caucasian". Basically, it won't help/hurt you either way.

I think it would sound like a stretch. They are asking about ethnic groups that are not part of the mainstream culture, and Ashkenazi Jews have been a big part of the US educational scene for multiple generations.

If your heritage is important to you, then by all means work it into an essay.

I am having trouble seeing anything exotic or interesting in your background, but maybe that is because I am Jewish, born in the UK, brought up in the US.

I wasn't approaching it from a minority point of view, I was actually wondering if there was any chance of discrimination. There's been a bit of a scandal about that in British universities recently.

Historically there has been discrimination of Jews in US colleges. But it is mostly past, ASFAIK. Jewish representation in entering classes is quite high.
