Will applying to more than one UC school affect my change of getting in at the more difficult ones? For example, if I really want to go to UCLA but I also might consider UCSD then should I apply to both?

Personally, I only see myself attending UCLA so should I only apply there and express my interest in UCLA in my personal statement (Talk about visiting, etc).

It's obviously not a good move to apply to two UCs yet talk about only one of them in your personal experience. The UCs typically don't look down upon applying to more than one of the institutions. I'm not even totally sure they can see all of the UCs you applied to. The only reason (I think) one UC would look down upon you as an applicant is if you talked about how much you'd like to go to another UC.

Will Berkeley look down on me because I applied to UCLA? Absolutely not. And if they do, then that's completely unethical and childish.

It's ridiculous to think that they would look down on people applying to more than one school. I don't know one single person who's only applying to one UC; they'd have to be crazy or have a 4.00 and decide to apply only to Merced.

Just change the school name in your personal statement. Hopefully it wasn't too wrapped up in your dream school. None of my statements even mention the UC specifically; I'm applying to 3.

They don't care which campuses you apply to. However, I would advise against writing about a specific campus in your essay. After all, they do not consider applicant interest in admissions.

Furthermore, the same essay gets sent to all your schools. I don't think UCLA would appreciate if you wrote about how lovely the San Diego campus is and how you've always wanted to live in San Diego in your essay. Although they wouldn't hold it against you, it would just seem inappropriate.
