I have a fairly solid application, and I wish to attend UCLA or something similar next year, but I really want to apply as a chemistry major. Would this hurt my chances if I didn't take AP Chem? should I self-study AP chem this year (school doesn't offer) to keep myself from being at a disadvantage?

Don’t worry about it. Plenty of chemistry majors start with General Chemistry.

Typical recommended prerequisite for freshman chemistry (for chemistry majors) is high school chemistry and possibly high school physics. AP chemistry is not required.

But you may want to check the http://talk.collegeconfidential.com/internships-careers-employment/1121619-university-graduate-career-surveys.html to see if the job and career prospects of chemistry are acceptable to you. Some other majors like chemical engineering may be better in this respect.
