Applying to NYU, need advice/clarity

I'm a junior going into my senior year at a competitive public high school in California and NYU is my dream school. That being said, I've done the research and know that there are actually a multitude of different colleges each pertaining to different interests/subjects. The problem is that I'm actually interested in many different fields across a number of different colleges.

So when I apply in the fall, do can I apply to more than one college? Can I change my major based on the college? Would it be better to go in undeclared? What about cross-majoring/minoring in between the schools? Do I/Should I specify where my primary interests lie? and If say, I apply to Stern but don't get in, is there a chance I could still get in but going to CAS, Steinhardt, Gallatin, etc?

I'm just alittle freaked out about college admissions right now cause my high school career was alittle rocky in parts, but I would still very much like to go to NYU cause of everything that they offer. I just want a little more clarity about the application and admissions process.

Can post additional info if needed, just lemme know what you need. Muchas Gracias :)

You must apply to a specific school and you can’t transfer immediately after you get in. You can, however, do
an internal transfer later on (depending on which school, it can be pretty hard.)

When you apply, there is an option to be considered for other schools if your first choice rejects you. So if you apply to Stern and don’t get in, you can be deferred to another school.

Can only apply to one specific school.
It is not an issue at all to change majors within a school. Meaning, if you get into CAS you can change from Bio to Econ to Psych in the blink of an eye. Similarly for Stern you can change from Finance to Econ to whatever. As long as you make sure you have the right classes to graduate on time. Only thing that might not be flexible is changing around in Tisch; I don’t think you can switch from, say, acting to film directing.
Transferring cross schools can be incredibly difficult, too, especially to Tisch or Stern. The other schools are probably more manageable.
For cross-majoring, I think anyone can cross-major in CAS. You can’t cross major into Stern, though. Have to be in Stern to get a major from Stern. You can cross minor from another school no problem, though.
