I've written some good essays about art and architecture. Someone suggested I include these in my Architecture portfolio for Cornell. What do you think?

Well, considering Cornell requires 15-20 pieces of art in its portfolio, that leaves you two options:

If you don’t have enough pieces for the portfolio, add your essays. I would suggest going with the architecture essays since you are applying to that specific program.

If you do have the required amount of pieces, I would not add in essays to substitute for your artwork, since a higher emphasis is placed on the portfolio.

I do not attend Cornell University, but I am a senior this year who has applied to Cornell, and knows people in the AAP program.
