Are not all essay topics weighted equally?

Does it matter which topic you choose to write about? I mean, as long as the essay is well-written and developed, it shouldn't matter if you wrote about a significant experience or on a random topic.

Right. It's how you are able to reflect on the experience, and write about it. That;s more important than what the experience itself is. Of course, it's harder to write a good thoughtful essay of a totally trivial topic. Harder but not impossible. An applicant would probably have more profound and interesting things to say about, say, the loss of their mother than the cancellation of their favorite TV show. But an important topic doesn;t necessarily result in a profound, unique essay. And an apparently trivial topic, depending on what direction it went, could end up producing a profound unique essay.

(And, yes, it should of course also be well-written and developed.)
