Are SAT 2 Language impressive?

Specifically, SAT Subject stests languages in areas colleges know you won't have grown up speaking ie a Hispanic student taking Chinese. I ask this because I recently had an on campus interview with an admissions rep

On the slip of paper I got, I put down 3 SAT 2s I had taken. These were 800 Math 2, 730 US History and 710 French. When he looked at my scores, he didn't comment on my Math or History scores, but seemed very impressed with my French score." He asked if my parents spoke French, how long I had been taking it, etc, and just ended with "WOW. That's a really impressive score for someone not fluent." before moving on

So my question is, would you say in general, scores for languages you're not fluent
in are generally more impressive than other subjects?
I know CC is probably not accurate for what admissions officers want, and I was talking to an assisant dean of admissions, but is there any sort of consensus like this?
Would you say a 710 French is better than a 730 in another subject?

Perhaps it’s more of a reaction to seeing a SAT II score for french. It’s probably a test that he doesn’t see often. That said, there isn’t anything extraordinary with a 710 in french. It all depends on how many years you’ve taken of French. If three or four (or equivalent) then I would hope that better language students would be up there in the 700s.

My opinion is to that where 2 SAT II tests are requested to submit the Math 2 and the US history.
