Asking for LOR while taking profs class

Hello. I can see why many would say that it is best to get a LOR from a professor after taking his/her class however I am in an intersting situation. After hours upon hours of research I have found that I really want to study supply chain management(SCM), but my school doesn't offer it,so I want to transfer to one that does. My school offers non-recurring classes and next semester there is one about supply chain management. It is meant for juniors and seniors but I am a first year student and sophmore by credit. Since I have never taken a business class before and I want to gain admission into a business school should I ask my SCM professor for a reccomendation? I talked with him when I wanted permission to take the class as I did not meet the Pre-Reqs. We shared many of the same interests and he seems like a great person. Transfer apps are due march 1st so I would ask him for one the first week of February, only 3 weeks after steeping foot in his class. What are your suggestions? Another idea would be to ask my stats professor for one. I got an A in her class but my SAT Math score is very low for the schools I am looking at, do you think a rec from a stats professor will allow admissions staff to overlook my lackluster math sat score?

Btw: not applying this semster is not really an option as I am not the biggest fan of my current school and am flirting with the possibility of spending my entire junior, or rather, third year abroad.
