Is it a bad idea to do a monologue where the character is writing a letter/reading out a letter she just wrote? I've found this really good comedic monologue which fits me perfectly, but someone once told me it was a bad idea to use props in audition, and it makes no sense without the letter. Any thoughts?

I think I may have the perfect answer for you. No, its not a bad idea at all. For my classical monologue I did Malvolio from Twelth Night and I did the letter speech and not one of the schools I auditioned for told me I couldn't use it. I mean I didn't ask if it was okay, I just went with it. At my Purchase audition I got a laugh from the auditor when I pulled it out of my back pocket, before I started. So if the monologue is perfect for you I say go for it.

According to my teachers: NO. Absolutely not. Don't bring props and don't pantomime. You can adapt the monologue though and your character's physicality to suit an altered monologue.
