I am a senior who’s been accepted into several schools (Arizona, Arizona State, Mizzou, Ole Miss). At the moment I have a 2.9 cumulative gpa going into my second semester of this school year. This last semester I finished with a 3.75 gpa however and I am very confident that i can do it again. My question is this: if I was already accepted into the school will they consider my gpa at time of application, or final gpa when considering automatic academic excellene scholarships? For these schools and most other schools I have applied to the minimum gpa for an excellence scholarship is 3.0. If i finish the school year with a gpa high enough to raise my cumulative to above 3.0 will I be awarded these scholarships? I have a great act score (29) so the scholarship money would be awesome!

I believe that they would look at GPA at time of application. i think schools award scholarships such as these at the time of notification of admission, or as part of the FA package, so final GPA wouldn’t be considered.
email the admissions office at each school to get their word on what they look at, and if you can still apply for some money.
Call the schools to ask. Each one will have different cutoffs.
I have looked into this question at Ole Miss and can say with confidence that their automatic merit scholarships use the 4-year cumulative GPA, however your high school calculates that. My understanding is that after Ole Miss gets your final transcript, they automatically deduct the appropriate award amount from your bill. Sounds like your strong senior year should save you a lot of $$ if you choose Ole Miss. Good luck!
