Being a Mexican increase your chances in colleges?

I've heard that it does, but why exactly? And why specifically Mexicans? When I applied to colleges, it asked if I was a Hispanic (which I am), but I don't understand why it is so significant? I am also wondering because I've seen people post that being a Hispanic will help a little for a "lower" SAT/ACT score.

When it comes to college, Hispanics, Blacks, and Native Americans are underrepresented minorities, and colleges will benefit from their inclusion.

Most colleges have difficulty finding hispanic applicants and feel that their campus is enriched by a diverse student body. Therefore, a limited number of colleges spend extra time recruiting for hispanic applicants – and may even use differing standards to for admitting them.
