I really want to prepare and score high on the SATs, so I'm wondering what SAT prep books to get. Any advice would be appreciated.

Imo, the Blue Book and if you need a supplement get Barrons.

I've read through some threads and I've been hearing a lot about this blue book. I'm not sure what this book is and how would I be able to get it?

looks like this:
http://www.amazon.com/gp/product/0874477182/sr=8-1/qid=1152495997/ref=pd_bbs_1/104-8849503-1838345?ie=UTF8

you can get it at your local bookstore or online, etc.

get a writing workbook (barrons preferably), a good CR book like RocketReview or Grammatix and a math book, like Gruber's or Barrons, then a book for practice like the Bluebook or the Princeton Review 11 tests

Don't get grammatix. Don't get rocketreview. Don't get PR. Don't get Barron's. If it's not made by the collegeboard then don't get it. Get the online course and the blue book and get yourself a 2100+ (I don't even know you but this is how much faith I have in those two resources)

Do they update the blue book every year? How would you know if the book covers the new SAT they've made?

The Blue Book (for the new SAT) replaced the old book "10 Real SATs" (the old SAT).

The current one is copyright 2005, I don't see why they would though, the test isn't going to change again (hopefully).
