when would it be best for me to apply to law school if i plan on doing the peace corps after college? i know that sometimes people take a year off in between college and law school, but the peace corps lasts 2 years, so i'm not sure whether it would be better to apply during my senior year of college or after i finish the peace corps.

That depends on how your GPA and LSAT turn out by the time you graduate. If both are strong by senior year, then you might as well apply and then defer for two years, safe in the knowledge that you have the next step in your life planned out. If on the other hand your GPA and LSAT are marginal for the schools you’re looking for, then it makes sense to wait till after you’ve completed Peace Corps (or at least a year of it). Peace Corps counts as a pretty impressive EC, so it could help you out at schools where you’re borderline.
