I am currently in grade 11, and so far I haven't taken
any SATs yet.

I was planning to take SAT I this May, but since I will be writing the
IB Biology and Math SL tests in late May, I was wondering if I should
take the Bio and Math II SATs in May instead of the SAT I.
I am thinking I would have to study them and review the materials anyway,
so I was thinking I might as well just do the SAT IIs as well.

Do you think this is a good idea? Does IB Biology SL cover much of the SAT II material ?

Taking the SAT I in May doesn't seem like a good idea in light of your other commitments. If IB Biology is anything like AP Biology, the course will more than cover SAT II material, although if you haven't reached/still fuzzy on the units regarding taxonomy/physiology, now is the time to review those because the common part of the Biology test seems to represent these topic disproportionately. Math doesn't usually vary that much so it certainly wouldn't hurt to take the Math II test in May either.
