business at schools w/o a b-school

My son wants to study business. He's interested in a few colleges that don't have a business major per se but if he majored in economics he could pretty much take every course that he could take at a b-school. Specifically Johns Hopkins and Northwestern. He's not a super quant and might want a job as a management consultant or a corporation (not specifically investment banking, etc.).

Is it as easy to market yourself as a business major to consulting firms without the business major? Do you get to do the case studies type things?

For employment, would it be better to go to let's say NYU Stern or Wash U? I don't think he'd get into Wharton or Cornell business. He's about a 4.2, mid 700's on all SAT's and 2 SAT IIs. Great extracurriculars.
