So my dad and I have been working on my application since my Christmas break started, and we were planning on submitting on Christmas eve. Is it still possible for me to get an interview if I submit it at this time?

Ask your high school .Surely, they have contact with an interviewer .

Likely so.

I used to do alumni interviews for Harvard, and I did most of them January through March. And since Harvard has done away with early action, hardly any interviews will have taken place yet, if any at all.

Harvard will notify the interview coordinator of your local (or a nearby) Harvard Club, who will assign you to an interviewer. The interviewer will contact you to arrange a meeting.

saints: you realize that a huge number of applications are being sent in the next few days right? And that Harvard’s goal is to interview everyone right?

If you happen not to get an interview offer, it’ll have almost nothing to do with the fact of your submission timing.

Not every HS has a Harvard liaison. No reason to think this at all.
