I’m fairly certain I want to do economics, but I also want the chance to explore and have the ability to switch majors/concentrations if I find something else I like. Is this possible? If so, how difficult is it?

You do not declare your concentration until the end of your sophomore year. The whole point of a Brown education is to explore and try out new things. Even after you have declared your concentration you will have some time to switch, if you want to. So, yes, it is possible, and not difficult.
You can check out the school’s web site page here:

^admittedly, if you want to do Engineering in 4 years, you pretty much have to start your freshman year, but you don’t have to DECLARE (and you can always switch out) until sophomore year.
