For example could I get a Associates in Nursing, then later go back get a bachelors in Health Sciences or Physical Therapy Assistant, or Nutrition?

What exactly do you mean by “go back”? once you have an Associates degree you can transfer to a 4 year university and complete a Bachelor’s in whatever major you are accepted to.

^^My thoughts exactly. After completing an associates, you aren’t “going back” to get a bachelors. An associates degree generally doesn’t work in quite the same way as a bachelors. You declare a major, but you don’t get an “Associates of Physics” or an “Associates of History.” You either get an Associates of Science or an Associate of Arts.

You can transfer and declare any major that you want, but most associates programs are designed to cover the lower level requirements of a given bachelors degree. For example, someone completing an Associates of Science and majoring in physics will complete the Gen Ed core, as well as the lower level math/physics requirements. Someone completing the Associates of Arts and majoring in history will complete their Gen Eds, as well as the introductory American History, Western Civilization courses etc. Because of this, you’re at something of a disadvantage if you transfer and decide to complete a bachelors in something completely different.

Going from nursing to physical therapy or health sciences would be a bit more similar than going from something like physics to history, but there will still be different requirements that you will still need to complete.
