CC for summer

Is there a way to complete 30 transferable credit hours in ONE semester? Say if I were to enroll into two different CC's in order to do so? Is this possible?
Extra information: The university I would like to apply to after CC requires 30 credit hours, and a GPA of 2.5 or higher. While the other university (second on my list) requires AT LEAST 15 credit hours, and a 2.5 GPA.

That is highly unlikely. You can go to two different CC and take courses worth that much but it’s going to be more work than you can actually do. You would risk a drop at your GPA. In any case people usually complete 30 units within a year (fall & spring).

It’s not a bright idea during the regular semester, especially if you haven’t tried a very heavy course load (20+ units) before now. Summer sessions are generally condensed down to a shorter time period, so it’s even more demanding. Depending on how summer session is offered at your community college (multiple sessions that might not overlap versus one start date), you might be able to get around 20 units done without murdering your GPA. In any case, there’s usually a lag of a semester or more between when you apply and when you get to start, so it’s not like you’d be going to the 4 year university in the fall.
