Personal:

dont want to major in math or science

If you continue on this track then you will be average for Cornell. Of course, we need your SAT and SATII scores to see if you even fall within the range. I would say chill out for a while.

Also, don't worry about college so much. In the end college is just a school. In my personal opinion, any school in the top tier will give you a fantastic education, and the differences among them are negligible (in terms of how much you learn). I belive colleges are similar to shoes: they might help you run, but someone can win a race even without shoes. In summary: chill out.

Couple of comments. First the statement "If you continue on this track then you will be average for Cornell." by theslowclap is pretty false. I got accepted ED for class of 2010 (Engineering), I wasnt involved as you. EC's and SATs are fabulous. From what i have observed in my acceptance and other's rejections, consider:

Try to improve that 3.8 a bit

focus on the EC's that you want to continue in college, i.e., i am a chemical engineering major and my clubs in high school included science league, math league, Science honor society, math and science appreciation, chess club....it's 'bout the quality NOT quantity.
-Dont rely on your chinese heritage to get you into cornell. Know many chinese students that were flatout rejected.
-Take a chill pill. You are only a sophomore. I wasnt stressing out about college until senior year! True, i have been always active in EC's and academically, but thats because i loved to do it, not to impress AO's.

Also, don't rely on the "I'm not going for a math/science/engineering degree like every other asian, I'm unique" approach; it doesn't work either.
