Chance for NC schools?

I’m about to start applying to schools and would love some advice. My #1 is UNC Chapel Hill, but I’m also applying to UNC Charlotte, UNC Wilmington, UNC Asheville, Elon, App State, Georgia, and UCSD (dad lives in california and wants me to apply).
Anyways, here are my stats! Any feedback would be appreciated.

Live in North Carolina
Rising Senior
Half Caucasian/half Peruvian
Female
Unweighted GPA: 3.917
Weighted GPA: 4.625
Rank: 26/369
SAT: 1720 (will re-take)
CR: 560
Writing: 560
Math: 600
(I know my SAT score is low for Chapel Hill but I will re-take in October more times and my EC’s are are what’s most impressive)

AP’s taken: U.S History (3), European History (3), English Language and Composition (3) (but A’s in all)
Senior year course load: AP World History, AP English Lit, AP Bio, AP Psych, AP Calc AB, Ceramics, Literature and Film, and a dual enrollment class at a community college that’s Sociology.

Extracurriculars:

-Environmental Leader in Leadership Club

-Part-time job at a bakery (about 15 hours a week)

I already wrote my essays and have asked my boss and AP Bio teacher to write me a recommendation since she knows me from being the advisor of Animal Protection Club and has a lot of positive experiences with me.

Again, I know my SAT isn’t fabulous, but I think most schools take grades and GPA into higher consideration so I don’t think it will drag me down that much, especially since I’m in-state for my top schools.
