To be honest, you look more like a music major than a economics major because most of your extracurriculars (or at least all of the significant ones) show unusual talent in that area. Keep in mind that it may look a bit weird if your actions say music but you say economics.
I agree that you are a strong applicant. Only downsides/unknowns are: your unweighted GPA isn’t greatest, you havent’t listed how rigorous coursework you have taken, and (lack of) leadership role within school. It may be good for you to get leadership role in a club or team in your school between now and when you send ED application.
Arkansas may be an under-represented school at NU, so that can be to your advantage.
If you apply to the school of music, you should be admitted. This will enable you to double major in the college of arts & sciences for economics.
If you apply ED to arts & sciences, your chances are probably better than 50/50 due to your state of residence. Essays are important for Northwestern University. Of course, the audition is important for the school of music.
Once admitted, changing majors & schools is possible.
Evanston is great & Chicago is amazing.
When visiting Evanston, try to visit the law school & med school on the Chicago campus of Northwestern. Incredible !!!
