Okay I will cut to the chase so here we go...
Schools I am looking into:
-NYU
-Fordham
-Rutgers NB
-UC Berkeley
-PSU
-Temple

-I am an Econ Major or Finance (same core classes just haven't decided fully yet)
-Transferring from a CC
-Will have 55 credits (give or take a few) at the end of this school year.
-GPA 3.4
-Wrote for my CC newspaper as Sports editor
-Created a Stocks Club at my CC
-I currently hold a job of three years while going to school
-Created and run my own iPhone app developing company (Have programmers and Designers that work for me)
-I volunteer at an animal shelter by me (will have well over 100 hours by the time I make my transcripts)

Am I reaching too much? Also I will be applying for spring 2015 (not sure if all schools listed take spring admissions, but lets just say they all do for this evaluation).
IMPORTANT I am a Cali resident, but my dad lives in NJ so if I get on his tax form I will be seen as in state for NJ. (for rutgers)

I’d say that for Rutgers you look pretty safe, but NYU is a definite reach though I think. It’s good that you’ve been able to maintain a job, and your ECs are pretty cool. I can’t really say about your other listings, but I’d recommend you try and get your GPA up. That never hurts.
