Your GPA is a bit low for most of the UC’s and SLO especially for CS. Your SAT score is within range for the UC’s.
Since CS is so competitive these days, you need to stats above the averages so your GPA will hurt you especially at the top UC’s and it would help to raise your SAT also.

I’m trying to cut down on my school list, can I have some assistance?
My only schools that are must haves are:
SJSU
CPSLO
UCSC
UCSD
UCLA OR UCB (They’re both my dream schools)
Have you visited any of the schools listed? See which campuses/locations you like.
Only Schools I’ve visited are CPSLO and UCB, mainly I want schools that have strong CS programs.
I would drop either UCLA and SLO or UCSD. With a UC/CSU GPA below 4.0, it is highly unlikely you will get an acceptance from any of these schools. I would keep UCR and UCI along with SDSU or CPP. UCD/UCSB could go either way and again below a 4.0 UC GPA for CS will be tough. I would keep SCU over USC since I think you would have a better chance there.
With CS it is important to apply widely, so how many schools is your limit?
8-10, does CPSLO, and CPP offer the same kind of learning(hands-on)? Not applying to any privates now, thought about it, and didn’t like SCU that much.
CPP does the ‘learn by doing’ thing - you should apply.
The easiest ones to cross off are the most selective schools - but those are your dream, and UCs share an ap so, I encourage you to apply to them and let the chips fall where they may. I’d focus your energy on UCSC, SDSU and CPP,. all are pretty likely to accept you and have really good CS programs.
