Chances as a Spring Transfer

I am taking this fall semester off to transfer in the spring, and I wanted to ask here before finalizing my list of schools

I am applying as a junior from a small, middle of the road, liberal arts school. I am applying as a Biology Major, I am also a premedical student.

Summary of my application:

College GPA: 3.8
My science/math GPA is 3.92
(I have only gotten a B in an art class my first semester when I wanted to be a graphic design major, since then it has been all As and A-s)
Not the most rigorous courseload, Bio 1&2, Chem 1&2, Calc, Statistics, and other gen. ed courses.

HS GPA: 3.3
SATs: somewhere in the 1200s, luckily for most schools I will not have to submit them since I'm applying as a junior. UVA is the only school that asks for them on my list.

I am writing my essay about the change that I have undergone in college, which is reflected in my transcript. My first semester was a 3.3, from then on out it was a 3.9 or higher.

Extracurriculars:
Work Study internship at Harvard Medical School for 2 years (non-clinical)
Research Assistant in a hospital laboratory for 1 year
Student tutor for Cellular/molecular biology for 1 semester
Volunteer at local hospital during my time off for 6 months
Currently training to be an EMT
Member of business, psychology, and pre-med club at my last school
I am also an amateur boxer, do you guys think I should include that in my application or will schools look down upon it?

My list of schools is still subject to change, but right now it is:
U of Rochester (1st choice)
The College of New Jersey (in-state applicant)
Loyola New Orleans
University of Virginia
College of William and Mary
Wake Forest
U of Pittsburgh

Am I going to be considered a competitive applicant for all the schools that I listed? Aside from UVA which is my one major reach, especially since they ask for SAT scores

Any input would help, thanks

also considering Vassar and other similarly ranked liberal arts schools
