I'll have pretty good recs from my teachers, and an amazing rec from the woman who runs the Traveling Players Ensemble (the organization I mentioned).

My interests are chemistry/physics and theatre. I think I want to major in chemistry or physics and either minor or, if that's not possible, double major in theatre. Not sure about how Chicago deals with that.

I'm aware that my stats place me somewhere in the range for Chicago, but I'm wondering how much you think my ECs will help me. They're a lot more focused than some of the lists I've seen on CC, and I think they show my passion for theatre, but I don't know how much that'll help me. Should I try to write about it in my essay (the Why Chicago essay I guess, not the big one of course) to get the most out of it? Any thoughts would be appreciated :). Thanks in advance.

Your years in theatre show a high level of commitment and interest, which Chicago likes to see in applicants. I would advise writing about anything that reveals more about yourself and your passions- be it physics, theatre, what ever. Consider your essays to be a door, that when opened will give the admissions committee a better idea of "what makes you tick".
But, there is no major/ minor in theatre available at Chicago. There are some Interdisciplinary programs in the Humanities that include a theatre element.
Here are the courses of study available at Chicago.

Thanks!

A friend of mine who is as psyched about Chicago as I am told me that Chicago was starting a theatre major this year (something very important to her). I just checked in the catolog and apparently it's still not either a major or minor this year. I think she might've meant that they're starting it next year.

Contact the admission office, or email Libby Pearson- an admissions rep. who has her own thread at the top of the Chicago forums.
